QUINCY -- Que Town BBQ is scheduled to open this spring in the Quincy Mall.
Dave French, who previously worked in kitchens at several local restaurants, said he wants to buy meat and vegetables from local farms and will use state-of-the-art smokers. Sauces will be made from scratch for use on smoked pork, beef and chicken wings.
French, 46, has been a chef at BoodaLu Steakhouse, the Quincy Country Club and got started in the business working at Kelly's Tavern. He also has won honors at barbecue competitions and said he trained many of the chefs now working in other Quincy restaurants.
"This isn't a fly-by-night thing. I've thought about this for 25 or 30 years," French said.
French said he's anxious to open, but he believes it will take until late April or early May to finish the necessary work to operate in the space that has been vacant since Krieger's Sports Bar closed on the south side of the mall. He hopes to have 12 to 20 more full-time employees.
This is the second business to open in the Quincy Mall through the Cullinan Kickstart program announced last year by Cullinan Properties, Ltd. The program offers startup businesses a variety of lease and financing options if they locate in the mall.
Sidell's Bakery and Diner was the first Kickstart participant and opened last September. In addition to bakery treats, Sidell's serves lunch and dinner selections.
Quincy Mall Property Manager Mike Jenkins said Sidell's has found success and he expects Que Town BBQ will bring additional shoppers and diners to the mall.
Que Town BBQ will be in a 5,300-square-foot space between Kay Jewelers and the Children's Place.
